ST PATTY'S CORN

With St. Patrick's day around the corner and so many of us spending more and more time indoors due to recent health events. I thought I would share a fun activity to do with your kids to have some fun together and pass the time. Below is my recipe for Sweet Green Kettle Popcorn. It is very easy to make, and almost all that you need you probably already have!


What You'll Need:


For Popcorn:

1 Cup Popcorn Kernels

6 Tblsp of Oil of your Choice (we used corn)

Large Pot with Lid

1/2 cup sugar

4 Tsp Salt

1 Tblsp Green Gel Food Coloring

Large Mixing Bowl

Mixing Spoon


For Sauce:

2 Tblsp Nut Butter (I used Sun Butter)

1/4 Cup Coconut Oil

1 Tsp Salt

1 1/2 Tsp Vanilla Extract

2 Tblsp Sugar

1/4 Cup Pure Maple Syrup

Small Sauce Pan

Small Mixing Bowl

Whisk


Recipe:

Sauce:

In a small sauce pan, place coconut Oil, Sugar, Salt, Nut butter, and Vanilla on med/low heat, whisk until coconut oil and sugar is completely disolved.

Next Pour Syrup in mixing bowl.

Add hot contents from the sauce pan to the Syrup, whisk until thick sauce has formed, then set aside.


Popcorn:

In a small mixing bowl add sugar, salt and gel food coloring and mix until incorporated. It's okay if you have chunks of green in the sugar it will help to coat all of your popcorn.


Place oil in a large pot and turn heat source to med/high with 2-3 popcorn kernels

Once those Kernels pop, the oil is ready


Quickly Take Pot off the heat source and throw in all your kernels and colored sugar.

Stir Quickly then Place the Lid back on and return to heat source.


Pro Tip: Remember to Move the Pot side to side to ensure the contents won't burn


You'll Start to hear the popcorn vigorously pop, once it starts to slow immediately take the pot off the heat source, you may think that all of the popcorn has not finished but that's okay as long as your pot looks pretty full!


Pour Your Green Popcorn into a mixing Bowl and let cool for a few minutes.

After its cooled down a little bit, its time to add your Sweet Sauce.

Add the sauce to the bowl, then hand toss the Popcorn with your sweet sauce

Voila, its that easy now your Popcorn is ready to be enjoyed!

Note:

How much sauce you add is based upon your personal preference we used most of it, but it was very sweet add less if that's what you desire or simply cut the recipe in half!
