Vegginized (Vegan) Spaghetti Carbonara

Anyone who knows me, knows I adore pasta. Adore honestly is an understatement if I'm being honest. Making a good Carbonara seemed near impossible for your everyday plant based dieter seeing that it mainly consists of eggs, cheese and bacon. However nothing is out of reach in the Vegginized test kitchen. I always would see the JUST companies "Just Egg" bottles of plant based egg alternative in the refrigerated section at my neighborhood supermarket, and I knew a vegetarian bacon was attainable due to frequently eating it on weekends at my best friends house ...so I figured i'd give it a shot. Whether your plant based or not this recipe is very tasty, so give it a try and tell me what you think.. Enjoy!


What You'll Need:

16 oz of Boxed Spaghetti

3/4 Cup Just Egg (plant based egg alternative)

5 Tblsp Vegan Butter

6 Pieces of Vegan Bacon Diced (I used Light Life Brand)

1/2 cup Vegan Parmesan Cheese ( I used Follow Your Heart Brand)

1 tsp Salt (plus more to taste)

1/4 tsp Black Pepper (plus more add to taste)

1/2 + 2 Tblsp cup of Reserved Pasta Water (this is needed for the sauce, so don't miss this step)


Recipe:

1. Fill Large Pot with Generously Salted Water and Cook Pasta Per Box Directions

2. When Pasta Has Cooked for about 2 mins of the total listed cook time

3. Turn Burner to High heat and Place Vegan Butter in a Hot Deep sided skillet

4. Add Your Diced Bacon and Fry until Crispy

5. When Pasta is fully cooked, take heat safe measuring cup and scoop up the specified amount of Pasta Water that is mentioned above .

6. Take a pair of tongs and remove spaghetti from the remaining water and place into the pan with your cooked Bacon

(Place burner on the LOWEST Setting if your pan has cooled down significantly. If your burner was JUST turned off, you don't have to worry about a heat source. The goal here: to have the heat of the pasta and pasta water cook the JUST EGG and melt the cheese with minimal to no additional needed heat)

7. Add Salt, Pepper, and Slowly Fold in your Just Egg, Reserved Pasta Water & Parmesan

8. Combine all ingredients until well incorporated and a luxurious sauce forms

9. Garnish with a bit more Parmesan Cheese, serve and Enjoy!
