Vegginized (Vegan) Wonton Soup

The other day I was desperate for wonton soup, and my dreams were crushed when the chinese delivery service stated that did not have a plant based option for the soup. So I took matters into my own hands and decided I would Vegginize My own. Below is the recipe, Enjoy!



you’ll need:

Vegan Nasoya wonton wrappers (you can find them in the fridge at your local grocer)


Filling:

2 1/2 cup diced Portabella mushroom

1 cup diced baby Bella mushroom

1/2 cup diced oyster mushroom

1/4 tsp pepper

1 tsp salt

1 tblsp cornstarch

1 tsp ginger paste

1 tblsp vegan butter

1/2 tblsp rice vinegar

2 tblsp sesame oil


Broth:

3 cups veggie broth

2 1/2 cup water

1 1/2 faux chicken bouillon cube(s) (I found some at my local health food store)

1 tblsp soy sauce

1 tsp minced garlic

2 whole stalks green onion

3 whole oyster mushrooms

3-4 springs of thyme

1/2 tsp ginger paste


place water, broth, bouillon cubes veggies, herbs, spices and soy sauce in a stock pot -bring to a boil then reduce heat and simmer for 20-25 mins.


while broth is simmering in a large skillet on med-high heat place sesame oil, thyme, mushrooms, salt and pepper and begin cooking. as mushrooms start to cook down add rice vinegar, garlic, vegan butter and cornstarch-stir and continue to cook for 3-5 more mins. then take off heat and set aside.


take wonton wrappers out of package and fill a small container or water. and mushroom filling then wet two corners of the wonton wrappers and bring opposing corner to form a point as you seal the sides. it should look like a triangle, at this point take each end of the triangle and bring them together to form a wonton. repeat until you’ve used all the filling.


in a large pot place wonton and fill pot with water. heat water and simmer on low heat for 4-5 mins DO NOT let the water boil so keep an eye on your wonton.


while wontons are cooking take a sifter/slotted spoon and sift out herbs, onion and mushrooms and discard. all you should have remaining is your broth.


place desired amount of cooked wontons and top with broth til wontons are submerged! garnish with green onion and enjoy ☺️
